Ingredients

  • 1 Tbsp Olive Oil (Extra Virgin – EVOO)
  • 1 lb Chicken Livers, fat removed and rinsed
  • 2 Cups Doggie-Friendly Chicken Broth
  • 1 tsp Rosemary, dried

Instructions

  1. Clean the chicken livers in cool, running water in a fine mesh strainer and drain the excess water off well.
  2. Remove fat and any other undesirable membranes.
  3. Gently heat the EVOO and rosemary in a frying pan on medium heat.
  4. Add the chicken livers to the frying pan and flip them around with a wooden spoon, all the while breaking the liver up into chunks.

Ingredients

  • 4 oz Beef Livers, cleaned and fat removed
  • 1 cup Water
  • 1 tsp Parsley
  • 1 tsp Thyme
  • 1 or 2 Tbsp of All Purpose Gluten Free Flour
  • 1 Tbsp EVOO

Instructions

  1. Clean the livers under cool, filtered and running water.
  2. Remove fat and other undesirable parts from the beef livers.
  3. Pour the cup of water into the medium saucepan along with the beef livers on medium heat.
  4. Turn the heat down once the liver water steams and simmer it for 30 minutes.
  5. Remove the beef livers and discard or cool them down and put them into the food processor.
  6. Returning to the medium saucepan, add the EVOO, flour, parsley and thyme. Let this mixture rest on a gentle simmer.
  7. Add the flour bit by bit until the mixture thickens into a sauce, stirring constantly.
  8. Remove the saucepan from heat and allow it to cool down completely.
  9. Either you can add it to the food processor and blend it with the cooked beef livers or you can portion out the gravy into freezer-safe containers.

Minted Lamb Liver Gravy

This is good for the springtime, when most lamb goes on special. What’s great is that you can make a huge amount of it and save it for up to six months in the freezer.

  • ½ lb Lamb Livers

  • 2 oz Animal Liver
  • ½ cup Water

  • 1 Tbsp Corn Starch
  • 1 tsp Parsley

Instructions

  1. After cleaning the livers and removing excess fat, put the livers in the saucepan along with water and doggie-friendly bone broth.
  2. Set the stove on medium-high heat and add the parsley.
  3. Bring it to a light bowl, reduce heat and simmer for 10 to 15 minutes.
  4. Once the livers cook through, use the potato masher to mush everything down into the pot as it cooks.
